Founded in 1989 in Kitami City, which faces the Sea of Okhotsk, a treasure trove of high-quality fish, Toriton is now a representative conveyor belt sushi restaurant in Hokkaido, with 15 stores in the prefecture and 3 stores in Tokyo. This time, we visit the Teine store, which just opened in 2023, to find out the secret behind its deliciousness.

A hidden gem with good access! "Toriton Teine Store"

The restaurant has a total of 72 seats. Parking is free for 160 minutes when using Triton.
Triton Teine, which opened in April 2023, is located in the Teine Tetsuhoku Shopping Center, a nine-minute walk from JR Teine Station. It is known as a hidden gem among Triton fans because the waiting time is much shorter than at other stores.

"Raw salmon" 350 yen. It is extremely fresh because it is killed on the spot after being caught.
Every morning, skilled buyers go to the market and select the freshest fish to deliver to the store. They prepare the fish in-store to preserve its freshness even in the slightest, and serve it in the freshest state possible. They are particularly particular about preparing shellfish, which lose their freshness easily, each time an order is placed. Of course, they also have a wide variety of ingredients delivered directly from the source.

The "Kitakaido Three Kinds Platter" of raw scallops, raw surf clams, and live whelks costs 902 yen. The three-piece platter, which is now available at any restaurant, is said to have been pioneered by Toriton.

The super popular limited edition "Kaisen Bomb Gunkan" is priced at 242 yen. Its vibrant appearance will whet your appetite.
There are plenty of unusual dishes on the menu, such as "Tako Salad" (octopus salad) made with octopus and mayonnaise, and Western-style sushi "Salmon Avocado Roll" and "Nixon Roll". The particularly popular "Kaisen Bomb Gunkan" is a gunkan dish that is generously piled high with a variety of ingredients based on tuna and salmon. At the time of our visit, it contained flounder and cucumber, creating an excellent balance between the texture and the rich flavor of the fish.

"Tuna Tataki" is popular with people of all ages and genders, 187 yen. It's a hearty dish.
Not only the size of the topping, but also the rice and seaweed are carefully selected.

The teacups, whose design hasn't changed since the store first opened, are popular for their cute, retro look.
Toriton is often talked about for the size of its toppings, but of course they are particular about more than just the toppings. They use carefully selected domestic rice to create shiny sushi rice. The Teine store we visited this time opened as a conveyor belt sushi restaurant without a conveyor belt in response to the COVID-19 pandemic. A dedicated conveyor belt is installed at each table, and items ordered via tablet are delivered immediately. This keeps loss of freshness to a minimum, allowing the food to be delivered to your mouth at its most delicious.
