The soup is based on a consommé carefully extracted using French techniques, combined with a soy sauce tare for a deep, complex flavor. To this multi-layered umami soup, chicken oil infused with the aroma of a wood fire is added, creating a bowl that can be enjoyed through its fragrance as well.

The noodles are custom-made in collaboration with the long-established noodle maker 'Sudo Seimen.' They are low-hydration, thin, straight noodles kneaded with *fusuma* (wheat bran), the same used in the Shinbi Shoyu, offering a wheaty aroma and a firm texture that harmonizes perfectly with the soup. The carefully prepared toppings, like chashu pork and seasoned egg, are also of high quality, further enhancing the satisfaction of the bowl.
