After working in restaurants in Tokyo and Okinawa, he moved to Sapporo and opened "Sopracciglia", which is now a popular restaurant with many fans.

There is a limit to the amount of food we can eat in our lifetime, so we want to eat food that tastes good and is good for us. That's why at Sopracciglia we use ingredients that are good for you," says Utsugi.

Utsugi, who is also a sake brewer, hunts deer in the mountains, plants rice for sake, fishes, and does everything else related to food! He also tries his hand at making the food and sake he serves at his restaurant.

The dishes that caught my attention included bacon made from venison he caught himself, cream cheese with herbs from his vegetable garden, homemade mayonnaise, and many more of Utsugi's homemade products! The once-in-a-lifetime encounter with dishes made with seasonal ingredients is even impressive.

Utsugi's attention to detail in his food grabs the stomachs of his customers. Many of the people who gather at Sopracciglia are particular about food, and he often receives information about good farmers and recommended ingredients.

Yabuta Pork", a pork product sold at Sopracciglia, is another farmer who was introduced to us through such an introduction. It is raised on a small pig farm surrounded by nature in the town of Tokachi Shimizu, and is not given artificial medicines such as vaccines or antibiotics. They also eat mainly vegetables and grains from natural farming methods in Hokkaido. Yabuta pigs are carefully raised with clean fat and tender meat. The restaurant offers a variety of menu items that are only possible because it buys half a pig directly from the market, and the super-fresh motsu (pork giblets) that arrive irregularly are said to be so good that fans fainter in agony!

In fact, Sopracciglia is the only restaurant in Sapporo that serves this Yabuta pork. Enjoy it in a luxurious hamburger steak or roasted.

The omelette is baked to a soft cream color with no peculiar taste and the sweetness of the egg. The crispy Yabuta pork bacon is a melt-in-your-mouth delicacy. Enjoy the homemade mayonnaise and herb cream cheese to change the taste little by little.

Utsugi, who was concerned that there were not enough stores in Hokkaido where you could buy Hokkaido products, opened the food select store "Brico" in "Sopracciglia" in 2023 to create a place where you can easily find and purchase good foodstuffs. In addition to items from Hokkaido, there are also foods from Kyushu, wines from Tohoku, and other items that Utsugi and the staff think are good. Of course, you can enter the store just for shopping.
