【Sapporo】Trendy Fermentation Cafe Opens February 2026! Popular for Healthy Meals & Weekend Breakfast
A Healthy Daily Special Set Meal Featuring Fermented Ingredients
The popular "Daily Special Set Meal" for 1,580 yen
The cafe's signature "Daily Special Set Meal" features a main dish of meat or fish, accompanied by dishes that showcase the charm of fermentation, such as miso soup, vinegared dishes, and nukazuke (rice bran pickles). Seasonings like miso and soy sauce are carefully selected down to the maker and aging period, and are used differently for each dish. Combined with a dashi broth carefully made from kombu and bonito flakes, it creates a gentle yet deep flavor. The dressing is an original creation made from natto (fermented soybeans), and it has none of the characteristic strong smell, instead offering a popular taste that fully concentrates the umami of the natto.
A handmade amazake (sweet fermented rice drink) is also served before the meal. This fruity drink, combined with pineapple, helps to suppress sudden spikes in blood sugar and aids digestion. While commercially available amazake is heat-treated, losing its live enzymes, here you can enjoy "living amazake" because it's handmade.

The cafe is not just for a coffee break; its menu, perfect for pairing with wine, is also a highlight. Every dish has an essence of fermentation, from the onion gratin soup simmered in vegetable koji broth, to the quiche made with fermented butter, and the roast beef marinated in koji. The ingredients are mainly organic from the Tokachi region, and wines that pair well with the food are also available by the glass.

A Place to 'Balance Your Diet' that Fits into Your Daily Life
Owner, Yukiko Otomaru
Owner Ms. Otomaru came to realize that "daily meals build the body" through her experience raising children. "Organic ingredients are important, but it's expensive and difficult to live on them exclusively. But fermentation is all around us. I believe fermented foods are 'good for the body' and easy to incorporate," she says. She also holds workshops on fermentation, baby food, and nursing care food, making the cafe not just a place to eat, but also a place to learn.
The calm, gray-toned interior
On Saturdays, Sundays, and holidays, the cafe also offers morning service with bagel sandwiches. Another appeal is that you can spend time at your own pace from morning till night. In the midst of a busy life, take a moment to rebalance yourself through food. Why not spend such a time at this hidden gem cafe in Maruyama?
