For four weeks, we will provide you with information on how to enjoy the town and its specialties. In this second week, we introduce "CACAO CROWN," a new chocolate brand from Niseko Takahashi Farm that would make a perfect Valentine's gift!

We asked Mr. Kei Takai, assistant manager of Niseko Takahashi Farm Milk Studio, about the history of Niseko Takahashi Farm and the bean to bar chocolate brand "CACAO CROWN," which will be launched in 2021!

Niseko Takahashi Ranch is a must-visit spot in Niseko Town.
With a workshop where freshly squeezed milk is processed, a café where you can enjoy freshly made sweets and ice cream, and a restaurant where you can enjoy fresh cheese and vegetables, this is one of the must-visit spots in Niseko Town.

As many as 300,000 people visit Niseko Takahashi Ranch annually (before the new coronavirus epidemic). The first reason why the ranch became a place that attracts so many visitors was actually due to a crisis at the ranch.

Niseko Takahashi Farm has launched a new brand of chocolates called "CACAO CROWN" that you will want to send to your loved ones.

What is "CACAO CROWN," a bean-to-bar chocolate brand from the ranch?

CACAO CR OWN" is a chocolate brand started in 2021 by Niseko Takahashi Farm, which continues to explore milk and dairy products.
The name "CACAO CROWN" comes from the image of the crown (crown-like shape) that forms on the surface of water when cacao beans fall into milk! The cow on the store's logo is also very cute.

There are many different types of chocolate, but "CACAO CROWN" is a brand that makes "bean to bar" chocolate, in which the entire process from the cacao bean to the chocolate is done in an integrated manner.
The brand carefully combines high-quality milk from the Niseko Takahashi Farm with high-quality cacao from around the world to create delicious, flavorful milk chocolates and confections that bring out the full flavor of the ingredients.

Because we purchase from trusted farmers, we are able to pay a fair price for high-quality cacao beans, and we are able to give feedback to the farmers about the cacao beans, which allows us to maintain a mutually beneficial relationship with them.

CACAO CROWN combines Niseko Takahashi Farm's milk with high-quality cacao beans from around the world to produce chocolate in a "bean to bar" style, in which the entire process of making chocolate is carried out in a workshop.

How "CACAO CROWN" was born

How was CACAO CROWN born?
Mr. Takai says that he originally wanted to make chocolate using milk from Takahashi Farm. Mr. Takai says, "I wanted to make chocolate using milk from Takahashi Farm. He was impressed by the taste of Swiss milk chocolate.
When I was making sweets, I used to order chocolates from all over the world. When I asked the wholesaler why, he told me it was because Swiss milk chocolate was so delicious. When I asked the wholesaler why, he told me it was because Swiss milk is delicious. From there, the idea of making milk chocolate in Hokkaido was born. I always thought it would be interesting if delicious craft milk chocolate could be born in Hokkaido.

He also wanted to create a product that people would want to take home as a souvenir. The desire to create milk chocolate that could be carried at room temperature, that would not be bulky, and that people would want to hand to their loved ones grew.
This desire was realized through an encounter with Mr. Matsumuro, chocolatier at "Maje de Chocolat," a chocolate specialty store in Tokyo that specializes in cacao beans.

Mr. Matsumuro is a chocolatier who is so particular about cacao beans that he not only sources cacao beans from all over the world through direct trade, but also has his own farm in the Philippines where he grows cacao beans. It was a time when he wanted to explore other ingredients in addition to cacao beans.
He said, "We want to have the skills, knowledge, and ingredients for chocolate and cacao beans. Mr. Matsumuro wants to focus on milk. Let's work together in a relationship where we can offer each other our strengths! and we finally decided to start."

The collaboration between Tokyo-based Maje de Chocolat, which is dedicated to making chocolate that brings smiles to the faces of everyone involved with cacao, and Niseko Takahashi Farm in Hokkaido, where milk is carefully squeezed with the health of the cows as the top priority, has resulted in a product called "Chocolate Milk Jam.
