The "Phantom" Pressed Sushi Only in Ginza: Secrets of Oji Salmon's New 'Oji no Oshizushi'
When you think of "Oji Salmon," born in Tomakomai, Hokkaido, their signature product is smoked salmon, as tender as sashimi, with a smoky aroma that complements the rich flavor of the fish. Now, a new product lavishly featuring this smoked salmon, 'Oji no Oshizushi,' has been released this April, exclusively at the Oji Salmon Ginza store.
Supervised by a renowned Ginza restaurant and already buzzing on social media with comments like "a taste guaranteed to be a winner" and "I absolutely have to try this," we introduce the charm of 'Oji no Oshizushi.'
Supervised by Ginza's Famous 'Sushi Kiyoshi'
The product is supervised by the famous Ginza restaurant 'Sushi Kiyoshi.' Located in Ginza 7-chome, 'Sushi Kiyoshi' is known as one of the most difficult-to-book restaurants in the competitive high-end sushi district of Ginza. Here, you can savor authentic Edomae-style sushi crafted with masterly skill. The master chef, who trained for a quarter-century at the long-established Ginza Kyubey, selects seasonal fish and pairs them with shari (sushi rice) made from rice and vinegar specifically chosen to match the toppings, creating the ultimate nigiri that harmoniously melts in your mouth.
A Perfect Marriage of Flavor-Packed Salmon and Exquisite, Specially-Made Sushi Rice
We spoke with a representative from Oji Salmon about the deliciousness of 'Oji no Oshizushi,' which caused a huge stir on social media even before its release.
What are the key points of 'Oji no Oshizushi'?
You can enjoy the perfect marriage between Norwegian Fjord salmon, carefully selected by Oji Salmon and smoked for a long time to concentrate its umami, and the exquisite, specially-made sushi rice (shari) that maximizes its flavor.
We also paid close attention to the thickness of the smoked salmon. By layering thinner slices, we allow just the right amount of air in, making it light and delicious to eat.
Do you have any recommendations on how to eat it?
First, we want you to purely enjoy the pairing (marriage) of the smoked salmon's aroma and taste with the shari, so please eat it as is. If you feel it needs something more, feel free to add soy sauce or salt to your liking.
