Located about a 5-minute walk from the north exit of JR Hassamu-Chūō Station, Sapporo Menya Mitsuba's most popular dish is, unsurprisingly, the Miso Ramen! The piping hot soup has a rich, deep umami flavor, thanks to their special miso sauce. The crisp, crunchy bean sprouts, stir-fried to perfection, provide a wonderful accent.

Their special miso is a blend of three types, including koji miso and white miso. The addition of ginger provides a refreshing change of flavor.

The noodles are the quintessential Sapporo-style medium-thick wavy noodles. You can truly taste the aroma and flavor of the noodles themselves.

Not Just Miso, Their Shoyu Ramen is Delicious Too!

Just like at Menya Saimi, miso is the most popular, but at "Jun-Sumi style" shops like this, the shoyu (soy sauce) ramen is also highly recommended. The piping hot soup, with the sharp, clean taste of dark soy sauce, is delicious! The firm and chewy noodles, characteristic of Sapporo ramen, and the perfectly stir-fried, crisp bean sprouts come together to create a delightful bowl.

Incidentally, the shoyu ramen is topped with kamaboko (steamed fish paste cake). The use of kamaboko instead of the more common naruto adds a nice accent to both the appearance and the taste.
