A rich miso broth, yellow wavy noodles, and a piping-hot bowl covered in a layer of lard—this is the quintessential Sapporo ramen. The style known as "Jun-Sumi style" is synonymous with Sapporo ramen. Today, we introduce "Sapporo Junren," the origin of the "Jun-Sumi style" and a shop that remains incredibly popular to this day.

The "Jun-Sumi Style" is the Gold Standard of Sapporo Ramen! The Popular "Miso Ramen"

The "Jun-Sumi style" is a lineage of Sapporo ramen that originated from "Junren" (pronounced "Sumire" at the time), founded in 1964, and "Sumire," a shop started by the same family. Its greatest feature is the layer of lard on the surface, which keeps the soup piping hot until the very last sip. A key point of Sapporo Junren's overwhelmingly popular "Miso Ramen" is that the miso is roasted to enhance its aroma. The rich yet enjoyable flavor is addictive and will have you coming back for more.

Furthermore, the firm and chewy medium-thick wavy noodles maintain their texture without getting soft in the hot soup. These are the classic yellow wavy noodles that scream "Sapporo ramen!"

A Favorite Among Ramen Connoisseurs: The "Shoyu Ramen"

While the Miso Ramen is overwhelmingly popular, the Shoyu Ramen also has a strong reputation among ramen aficionados. The secret is the rich soy sauce tare (sauce base) that has been continuously added to since the shop's founding, creating an exquisite flavor gently enveloped by the lard.
