Since its founding, Suage, a soup curry specialty shop from Sapporo, has won the hearts of many fans, expanding to five locations in Hokkaido and four in Tokyo. Their signature is a hearty bowl of soup curry packed with generous chunks of deep-fried vegetables and a flavorful,こだわりのスープ. The main branch, located in the heart of Sapporo, is well-known as a popular spot that always has a line.

Using Vegetables Carefully Cultivated on Their Own Farm

The "Suage Agri" farm in Ebetsu. They are constantly working to improve the quality of their vegetables.

Suage, which became a popular restaurant after its establishment in 2007, launched its own farm, "Suage Agri," in 2019. Here, they lovingly grow some of the vegetables used in their curry. Currently, they self-supply pumpkins, carrots, potatoes, and eggplants. In a dedicated storage facility, they maintain the perfect temperature for each vegetable, allowing them to mature and bring out their maximum flavor.

A Hearty Meal with Onion-Sweetened Soup & Plenty of Veggies

The classic "Crispy Shiretoko Chicken Curry" for 1,380 yen. It includes seven types of vegetables, such as potatoes, carrots, maitake mushrooms, and mizuna greens.

The soup is based on chicken and pork broth with tomatoes. To this, they add a paste of onions sourced from a contract farmer, which is essential to the Suage soup flavor. After adding about 10 different spices, the soup is left to rest overnight, resulting in a light yet mellow sweetness. As the name "Suage" (meaning plain deep-frying) suggests, the ingredients are deep-fried without batter, fully bringing out the natural umami of the vegetables. The generous chunks of vegetables make for a satisfying meal where you can truly taste the ingredients' inherent flavors.

Choose from 150g, 200g, or 350g (+100 yen) of rice. The cheese topping (+150 yen) is also a popular choice.

At the main branch, you can choose from the classic soup, a rich soup made with squid ink, or a soup with special shrimp oil. You can select your spice level from 1 to 10, with levels 7-10 containing a special jalapeño paste. It's not just about heat; they use olive oil to create a well-rounded deliciousness. It's said that even people who don't usually eat spicy food can handle their level 10. Pairing the spicy soup with cheese-topped rice creates an even richer, more complex flavor.

The Hokkaido-specialty "Charcoal-Grilled Lamb Curry" for 1,550 yen. It's topped with eight kinds of vegetables, including broccoli and okra.

Featuring Hokkaido's Famous Imo-mochi! Over 30 Fun Toppings to Choose From

The vibrant yellow color is sure to whet your appetite. The fragrantly fried Imo-mochi is 150 yen each.

There are over 30 toppings to choose from. Options range from simple ones like crushed natto, rock-laver seaweed, and wood ear mushrooms, to heartier choices like a chicken leg (fried or stewed), special Zangi (Hokkaido-style fried chicken), and seared braised pork belly. Just choosing is part of the fun.

"Inka no Mezame" potatoes are sweeter than common varieties and have a smooth texture.

The potatoes used at Suage are the rare "Inka no Mezame" variety, grown on their own farm. Their Imo-mochi, made by mashing these potatoes into a cake, is also a specialty. You can add it as a topping or enjoy its rich, natural sweetness on its own.

"I recommend the 'Oyster and Iwanori Seaweed Curry' with the squid ink soup. The flavors of the seafood create a synergistic umami boost," explains Ms. Okada, a staff member at the main branch. Her colleague, Ms. Sato, recommends the "Hokkaido Beef Motsu Curry" (main branch exclusive), which features beef offal slow-cooked for three days until it's meltingly tender. Each staff member has a passion for the different menu items, so if you're overwhelmed by the many combinations, don't hesitate to ask for their advice.
