Sapporo's "Suage" Soup Curry Specialty Restaurant: Raggedly Fried Vegetables from Own Farm, Variety of Soups and Toppings
Since its establishment, "Suage" has been loved by many fans and has five restaurants in Hokkaido and four in Tokyo specializing in soup curry from Sapporo. The soup is characterized by a hearty and satisfying bowl of soup filled with a variety of fried vegetables. The main restaurant is located in the center of Sapporo and is known for its long lines of customers.

Suage, which became a popular restaurant since its establishment in 2007, established its own farm, Suage Agri, in 2019, and carefully grows some of the vegetables used in its curry. Currently, the vegetables that the company is growing in-house are pumpkins, carrots, potatoes, and eggplants. The vegetables are stored in a dedicated storage facility where the temperature is thoroughly controlled to suit each vegetable. The vegetables are then ripened to maximize their flavor.
Soup that infuses the sweetness of onions & a hearty serving of vegetables
The soup is based on chicken stock, pork bones, and tomatoes. The soup is made with chicken stock, pork bones, and tomatoes, to which is added onion paste from a contract farmer, which is indispensable to the flavor of Suage's soup. After adding about 10 spices, the soup is left to rest overnight to bring out a light yet mildly sweet flavor. As the restaurant's name implies, the ingredients are deep-fried without being fried, and the umami of the vegetables themselves is fully utilized. The vegetables are chunky, which gives the dish a satisfying texture and the umami of the ingredients themselves.
Cheese on the rice is also available. A wide variety of customization is fun!
At the main restaurant, customers can choose from a standard soup, a thick soup with squid ink, or a soup with special shrimp oil. There are 10 levels of spiciness to choose from, with 7 to 10 containing special jalapeño paste. The soup is not only spicy, but also has a rounded taste with olive oil, and even those who normally do not eat spicy food say that they can eat the number 10 here. The spicy soup is served with rice topped with cheese for a fuller flavor.
There is also Hokkaido's specialty, imo mochi (potato rice cake)! Over 30 different toppings to choose from!
You can choose from more than 30 toppings. From simple toppings such as hiwari natto (ground fermented soybeans), iwanori (seaweed), and kikurage mushrooms, to more mouth-watering options such as chicken leg with a choice of deep-fried or stewed, special zangi, and seared kakuni (cubed meat). Just choosing the right one will make you feel happy.
The potatoes used at Suage are the rare "Inca Awakening" cultivated by the company, and the specialty is imo-mochi (potato dumplings) made by mashing the potatoes into dumplings. The potato is mashed into dumplings, and the dumplings are also a specialty of Suage.

Ms. Okada, a staff member at the main restaurant, explained, "I recommend the combination of oyster and seaweed curry and squid ink soup, which have the same seafood and synergistic effects to enhance the umami taste. Mr. Sato, another staff member, recommends the "Hokkaido Beef Mots Curry" (available only at the main restaurant), which is topped with beef tenderloin that has been prepared for three days. Since each staff member has his or her own passion for each menu item, it would be good to get advice from them if you are lost with too many combinations to choose from.
