A popular restaurant that was closed has been revived with the help of volunteers!
Mr. Suzuki of IDATEN Corporation, a former regular who is now involved in the restaurant business, came forward to revive the restaurant. After about six months of negotiations, he poured his heart and soul into recreating 100% of the original flavor. The soup is made from domestic chicken bones, beef bones, aromatic vegetables, apples, and other fruits, simmered with spices for a whole day, and then left to rest overnight. The next morning, the soup is simmered for another 6 hours, and then carefully rubbed by hand to extract every last drop of umami from the ingredients.
The flavor of the "bad girl's soup" changes depending on the ingredients.
It takes a total of 48 hours to prepare the soup. The aojyu soup is slowly simmered over low heat, and the excess fat is removed to give the soup a clean, delicate flavor. The mellow aroma of garam masala, a proprietary mixture, can also be enjoyed. The soup is also characterized by the fact that its flavor changes dramatically depending on the ingredients. It has attracted many fans as "soup for bad girls.
Curry of Chicken," which conveys the soup's appeal in a straightforward manner.
The manager, Mr. Kunii, recommends the chicken curry, saying, "If you want to enjoy the flavor of the broth most directly. The toppings are simple: chicken, potatoes, carrots, boiled egg, and bell peppers for color. The large chicken thigh is cooked slowly at a low temperature. You can taste the original umami of the chicken meat and at the same time, it is characterized by its moist and tender texture. Recommended especially for first-timers.
Popular menu item "Seafood Curry" with the umami taste of seafood
Another popular menu item is the Seafood Curry, in which the umami of the seafood stands out because of its light soup. Six types of seafood, including large shrimp, oysters, clams, and red fish, are stewed in the broth to bring out the powerful umami of the seafood. The classic type, which has kept its original taste since its establishment, is available in 8 types of spiciness from 0 to 6 (excluding keema and children's menu). Mr. Kunii says, "I want you to taste the most delicious moment," and he hopes you will take a sip the moment it is served.
For the first time since the establishment of the restaurant! The opposite taste of "rich" soup is now available!
Since its establishment, the restaurant has only served one type of soup, "bad girl soup," but in 2023, it will begin serving a new "rich" soup that is the polar opposite of the "bad girl soup. The soup is made by slowly simmering pork and chicken over high heat with a base of beef bones, and adding vegetables and specially prepared spices to the cloudy broth. The menu structure is completely different from that of "Bad Girl's Soup," with its own lineup of curried mushrooms, bacon, and chicken on the bone. There are four levels of spiciness to choose from here.
This soup curry is completely different from the traditional Savoy, but it is already gaining fans. The beauty of the presentation is another characteristic of this restaurant's curry. I wanted to show them a new look while never compromising that," Kunii says enthusiastically. The toppings and cooking methods are different depending on the soup, such as "fried" or "grilled" ingredients. We hope you will try the new soup that Mr. Kunii has devised.
