Triton is an extremely popular conveyor-belt sushi restaurant that has been featured on TV, magazines, and other media, and has had people waiting in line for up to four hours. The company is now one of Hokkaido's leading conveyor-belt sushi restaurants in both name and reality. This time, we will visit the Teine branch, which just opened in 2023, to discover the secret behind its delicious taste.

Triton Teine Store, which opened in April 2023, is located in the Teine Tekkita Shopping Center, a 9-minute walk from JR Teine Station. It is known as a hole-in-the-wall among Triton fans because the waiting time is much less than at other stores.

Every morning, our skilled buyers go to the market to inspect the fish, and deliver the freshest ones to the store. The fresh fish is then judged in the store to ensure that it is as fresh as possible and served in the freshest possible condition. Especially for shellfish, which are notorious for losing their freshness, the restaurant prepares them each time an order is placed. Of course, they also have a wide variety of items shipped directly from the place of production.

The restaurant also offers an abundance of oddities typical of conveyor-belt sushi restaurants, such as "Tako Salad" (octopus salad with mayonnaise, etc.) and Western-style sushi rolls such as "Salmon Avocado Roll" and "Nixon Roll. The popular "Kaisen Bakudan Gunkan" (seafood bomb gunkan), in particular, is a gunkan with tuna and salmon mixed with a variety of other ingredients and served on a platter. At the time of our visit, the gunkan was made with engawa and cucumbers, and the balance of their texture and rich fish flavor is also exquisite.

The Teine restaurant we interviewed for this report opened as a conveyor-belt sushi restaurant with no conveyor-belt lanes in the wake of the Corona disaster. Each table is equipped with its own lane, and orders placed on a tablet are delivered immediately. This minimizes loss of freshness and ensures that the food is delivered to the palate in its most delicious state.
Triton is a long-established conveyor-belt sushi restaurant in Hokkaido, but it also proactively adopts new technology. This attitude may be one of the reasons why Triton is enthusiastically supported by people of all ages.
