Tonkotsu (pork bone) and yet shio? By far the most popular "ton shio
The most popular menu item is "Ton Shio"! Many first-time customers may think, "Tonkotsu (pork bone) and shio? You may think, "Shio in tonkotsu (pork bone)? The creamy tonkotsu broth, made by burning the pork bones for a long time to extract the flavor, has no odor, and the saltiness enhances the original taste of the broth. You will be drawn in by the deliciousness of the soup at the first bite and will not be able to stop the lotus flower.
Explosively popular side dish: chashu rice balls
Another specialty of "Ramen Gajohara" is the popular side dish "Chashu Onigiri". Originally a service for regular customers, the restaurant made rice balls with pieces of chashu mixed in, and they became explosively popular. Now, it is so popular that as many as 300 onigiri are sold each day, and the restaurant even stocks its own special char siu pork. The 200 grams of rice is also a very generous portion.
The "G-type menu" "Masurao" and Niigata's local ramen "Tsubame-Sanjo Ramen" are also popular.
The "G-kei menu" "Masurao" is also popular, combining our famous pork bone broth and thick noodles! The soup is a real treat with thick noodles and bean sprouts, and the extra vegetables and garlic give it a punch of power.
The restaurant also offers a menu inspired by Niigata's local ramen "Tsubame-Sanjo Ramen" using "Masurao's" thick noodles. This dish, accented with back fat, onions, and iwanori seaweed, has also captured the stomachs of many fans.
