A Bowl of Sheer Beauty: The Delicious "Tanrei-style" Ramen at Shinasoba Chiu

The ingredients used are all carefully selected masterpieces, and the resulting ramen is known as "tanrei-kei" (light and clear broth style). A prime location, just a 5-minute walk from Maruyama Koen Station on the Sapporo Municipal Subway Tozai Line
The shop is located in the Maruyama area of Chuo-ku, Sapporo. It's conveniently accessible, just a 5-minute walk from Maruyama Koen Station on the Tozai Subway Line. Although there is no dedicated parking, there are coin-operated parking lots nearby, so visiting by car is also worry-free. The luxurious appearance of the restaurant builds anticipation for the special bowl of ramen that awaits.
The walkway leading to the restaurant also exudes a sense of luxury
The popular "Jidori Komen Shoyu," packed with the umami of free-range chicken
The popular "Jidori Komen Shoyu" for 1,100 yen
The most popular item is the "Jidori Komen Shoyu." It uses whole chickens from premium breeds like Amakusa Daio and Hinai Jidori, which are slowly simmered to extract the deep umami of the chicken broth. The soy sauce used for the tare (sauce base) is also specially selected, blending raw soy sauce from "Ando Shoyu" in Akita and tamari soy sauce from "Sekigahara Jozo" in Gifu. The free-range chicken oil enhances the flavor.
The noodles paired with the soup are homemade in the noodle room at the back of the shop. The beautifully folded noodles are meticulously designed to match the soup, offering a smooth texture as they go down, along with the umami and aroma of wheat.
Two types of chashu, made from Hokkaido pork and beef, and roast beef further elevate the deliciousness.
The other regular menu item, "Shio Ramen," is also highly recommended
"Jidori Komen Shio" for 1,100 yen
Shinasoba Chiu's regular menu consists of only two items: "Jidori Komen Shoyu" and "Jidori Komen Shio," and the shio (salt) ramen is also highly recommended. The salt-based tare, which allows you to fully enjoy the deliciousness of the clear chicken broth (chintan), is a blend of three types of salt, including "Nuchimasu" rock salt from Okinawa.
The shop's first limited-edition menu item, "Tsukemen," is also exquisite
"Tori-tsuke TKM" for 1,200 yen
While the shop has long operated with just two regular menu items, they are currently offering a limited-time (weekdays only) menu item called "Tori-tsuke TKM," served tsukemen (dipping noodle) style. You mix the smooth and chewy noodles with an egg yolk before dipping them into the dipping sauce, which combines the umami of chicken and soy sauce... You'll have to visit the shop to experience this deliciousness for yourself.
After launching a popular shop in Kiyota-ku, the owner now focuses on a signature bowl in the Maruyama area
Excellent not only in taste but also in appearance
The owner, Mr. Kawanami, first established the popular ramen shop "RAMEN RS Kai" in Kiyota-ku in 2017, where he captivated many fans with his niboshi (dried sardine) chuka soba. In 2021, he opened the current "Shinasoba Chiu," focusing his operations on a single style of clear chicken broth ramen. Mr. Kawanami, whose hobby is eating his way through ramen shops, confidently serves this bowl, and it continues to attract a growing number of new fans.

I love ramen and have been exploring ramen shops, mainly in Sapporo, for 15 years in search of that "delicious bowl." I produce the ramen event "Sapporo Ramen Angya!!" with the hope of livening up Sapporo's ramen scene. I also participate in the ramen segment of the popular TVh program "EXIT no Ayashii TV." Let's enjoy exploring ramen together!
