Sumire: The Legendary Sapporo Miso Ramen Shop and the Secret to Its Ever-Evolving Flavor
Located in Toyohira-ku, Sapporo, Sumire's main branch is a legendary and incredibly popular ramen shop that represents the city. While preserving its traditional flavor since its founding, this bowl of ramen continues to evolve with the times, captivating countless people.
The Overwhelmingly Popular Dish: Miso Ramen
"Miso" 1,200 yen
When you think of Sumire, you think of Miso Ramen! This time, we'll dive deep into the secrets of its flavor. When the Miso Ramen is placed before you, the first thing that catches your eye is the layer of piping hot lard covering the surface of the soup. The soup is kept so hot that no steam rises from it, allowing you to enjoy it piping hot until the very last drop.
The slowly simmered chintan (clear) broth is packed with the rich umami of animal-based ingredients and aromatic vegetables. The aromatic miso is combined with the broth in a wok, a classic Sapporo technique, which creates a perfect harmony between the two.
The Perfect Pairing: Custom-Made Medium-Thick Wavy Noodles by Nishiyama Seimen
The chewy and firm medium-thick wavy noodles are custom-made exclusively for Sumire by Nishiyama Seimen. These meticulously crafted noodles maintain their texture without getting soft in the piping hot soup.
Enjoy a Flavor Twist with Ginger
While the aromatic miso provides a rich flavor, dissolving the ginger creates a refreshing change in taste. The wontons added as a topping provide a delightful textural accent.
A 10-Minute Walk from Nakanoshima Station on the Sapporo Municipal Subway
The shop is a 10-minute walk from Nakanoshima Station on the Sapporo Municipal Subway. There is also a parking lot with 16 spaces in front of and next to the store, making it convenient to access by car.
Menu
While Sumire is overwhelmingly popular for its miso ramen, the shoyu (soy sauce) ramen and chahan (fried rice) are also popular dishes. If you visit with friends, try ordering different items and sharing them. Many apprentices who trained at Sumire have gone on to open their own famous shops. Be sure to savor this treasured bowl from a legendary shop that leads the Sapporo ramen scene.
