First up is one of the shop's signature dishes, the "Back-Fat Niboshi Soba." The soup, made with horse mackerel niboshi from Tottori Prefecture and Ibuki iriko (dried sardines), has a refined taste that avoids the harshness or strong smell sometimes associated with dried fish. The umami from the carefully selected niboshi is enhanced by the richness of the back fat, creating an aroma and flavor that are sure to captivate you.

"Jidori Soba" - 1,100 yen
The other signature dish is the "Jidori Soba," where you can fully savor the rich umami of chicken. The soup base uses Hinai Jidori chicken; the carcass is first roasted to draw out its flavor, and mature chicken is used to maximize the aroma and umami. The balance is exquisite, with chicken oil perfectly harmonizing the sharp soy-based sauce, resulting in a flavor so delicious it will make you sigh.
The medium-thin straight noodles, rich in wheat flavor and aroma, pair perfectly with the soup.

"Chuka Soba" - 900 yen
During the weekend-only "Asa-Ra" (morning ramen) service, they offer a special soup different from their regular hours. It's a clear pork broth made exclusively for Asa-Ra, combined with Hokkaido ingredients. On the day of our visit, the soup was made with Kinki rockfish, featuring a distinctively clean and clear flavor.
You can choose between a salt flavor with thick noodles or a soy sauce flavor with thin noodles, but we recommend the salt. The chewy, thick, hand-crumpled noodles are an excellent match for the gentle soup, allowing you to fully appreciate its umami.
A 5-Minute Walk from Gakuen-mae Station on the Toho Subway Line, with Ample Parking
The shop is a 5-minute walk from Gakuen-mae Station on the Toho Subway Line and a 10-minute walk from Hiragishi Station on the Namboku Subway Line. There is a shared parking lot with the first-floor establishment that has space for 20 cars, so visiting by car is convenient.
