"A Bowl So Good You Can't Stop Eating Rice!" - Sapporo's New "Hokkaido Iekei Ramen" Spot, Blending Local Ingredients with Authentic Methods [Opened Jan 2026]
Authentic Iekei Ramen with the Traditional "Yobimodoshi" Method
Ramen 1,000 yen (tax included)
Using pork bones from Hokkaido, the soup is a true Iekei-style ramen made with the "yobimodoshi" method, focusing on a balance of meaty and mature flavors. Compared to more recent Iekei ramen, it has a classic taste where the soy sauce tare is not overpowering. The umami of the pork bone broth, the sharp soy sauce, and the chicken oil come together to create a harmonious flavor.
The Perfection of Rare House-Made Noodles for Iekei Ramen
The noodles served are house-made, a rarity for Iekei ramen. Made primarily with "Yumechikara" wheat from Hokkaido, these noodles allow you to fully experience the flavor and umami of the wheat itself. They also inherit the Iekei ramen noodle-making tradition by using a technique called "gyaku-giri" (reverse cutting), which creates a rough surface on the noodles, allowing them to better absorb the soup. This is a masterpiece where you can truly feel the excellent match between the soup and noodles.
Endless Enjoyment with Toppings & Customizations
Soubuya also offers a full range of toppings. From spinach to cabbage, sourced from specific producers, every supporting ingredient is meticulously chosen to elevate the perfection of the bowl.
Additionally, there's a sign inside suggesting "How to Best Enjoy Your Ramen," which is a great guide to follow for the full experience.
Prime Location, a Short Walk from Tanukikoji for Sightseers
The restaurant is located on the second floor of the same building as its sister shop, 'Tonkotsu Ramen Taiga.' It's just a short walk from Tanukikoji Shopping Arcade, making it easily accessible regardless of the weather. It's a 7-minute walk from Odori Subway Station and an 8-minute walk from Susukino Station, making it a great spot for a meal or to cap off a night of drinking.
The stylish and clean interior provides a calm space to focus on and enjoy your ramen. Be sure to visit the newly opened "Soubuya" to experience a new Hokkaido-style Iekei ramen.
