Using pork bones from Hokkaido, the soup is a true Iekei style, made with the "yobimodoshi method," which focuses on a balance between meaty and mature flavors. Compared to recent Iekei ramen trends, its taste is more classical, with a less overpowering soy sauce tare. The umami of the pork bone soup is complemented by a sharp soy sauce and chicken oil, which brings all the flavors together.

The noodles served are house-made, which is rare for Iekei ramen. Made primarily with "Yumechikara" wheat from Hokkaido, these noodles allow you to fully enjoy the flavor and umami of the wheat itself. They also follow the Iekei ramen noodle-making tradition by using a technique called "gyaku-giri" (reverse cutting), which creates a rough surface on the noodles to help them pick up more soup. This is a masterpiece where you can truly appreciate the excellent match between the soup and noodles.
