"A Bowl That Makes You Crave Rice!" Sapporo's New Hokkaido Iekei Ramen Spot with Local Ingredients & Authentic Methods [Opened January 2026]
Authentic Iekei Ramen Made with the Classic "Yobimodoshi Method"
Ramen 1,000 yen (tax included)
Using pork bones from Hokkaido, the soup is a true Iekei style, made with the "yobimodoshi method," which focuses on a balance between meaty and mature flavors. Compared to recent Iekei ramen trends, its taste is more classical, with a less overpowering soy sauce tare. The umami of the pork bone soup is complemented by a sharp soy sauce and chicken oil, which brings all the flavors together.
The Perfection Achieved with House-Made Noodles, a Rarity for Iekei Ramen
The noodles served are house-made, which is rare for Iekei ramen. Made primarily with "Yumechikara" wheat from Hokkaido, these noodles allow you to fully enjoy the flavor and umami of the wheat itself. They also follow the Iekei ramen noodle-making tradition by using a technique called "gyaku-giri" (reverse cutting), which creates a rough surface on the noodles to help them pick up more soup. This is a masterpiece where you can truly appreciate the excellent match between the soup and noodles.
Expanded Enjoyment with Toppings & Customizations
Soubuya also offers a full range of toppings. From spinach to cabbage, sourced with care, even the supporting ingredients are meticulously chosen to elevate the perfection of the bowl.
Additionally, there's a sign inside the restaurant with "Recommended Ways to Eat," which is a great guide for enjoying your meal.
A Great Location within Walking Distance of Tanukikoji, Perfect for a Stop During Sightseeing
The restaurant is located on the second floor of its sister shop, 'Tonkotsu Ramen Taiga.' It's a short walk from the Tanukikoji Shopping Arcade, making it easily accessible regardless of the weather. It's a 7-minute walk from Odori Subway Station and an 8-minute walk from Susukino Station, making it a convenient spot for a meal or a final stop after a night out.
The stylish and clean interior provides a calm space where you can focus on enjoying your ramen. Be sure to visit the newly opened "Soubuya" and enjoy a new Hokkaido-style Iekei ramen.
