Using pork bones and wheat from Hokkaido, this ramen reimagines the classic Iekei ramen in a Hokkaido style, boasting a rich yet crisp flavor. This authentic Iekei ramen is made with pork bones from Hokkaido, and the soup is carefully balanced between meaty and matured, using the "Yobimoeshi method." Unlike today's Iekei ramen, it has a classic flavor that is not overly soy sauce-based. The umami of the pork bone soup is brought together by the sharp soy sauce and chicken oil.

The noodles are homemade, which is rare for Iekei ramen. The noodles are made primarily from Hokkaido wheat "Yumechikara," allowing you to fully enjoy the flavor and umami of the wheat itself. They also inherit the traditional Iekei ramen noodle making technique, "reverse cutting," which creates a rough surface that allows the soup to cling to the noodles better. This is an excellent dish that you will want to try and experience how well it matches with the soup.
