The Perfection Achieved with Rare House-Made Noodles for Iekei Ramen
The noodles served are house-made, a rarity for Iekei ramen. Made primarily with “Yumechikara” wheat from Hokkaido, these noodles allow you to fully enjoy the flavor and umami of the wheat itself. The shop also inherits the Iekei noodle-making tradition by using a technique called “gyaku-giri” (reverse-cut), which creates a rougher surface on the noodles to better catch the soup.
