If you're not from Hokkaido, the term "age-kamaboko" might not ring a bell. It's that food made from kneaded and fried fish paste, known in other regions as "Satsuma-age" or "Tempura." This time, let's introduce a long-established shop famous for such fried fish cakes.
For the people of Hokkaido, "Kamaei" in Otaru is a household name. Founded in 1905, their products are now sold not only in their Otaru stores but also in Sapporo's department stores and at New Chitose Airport.
Kamaei offers about 70 different kinds of products. They are made with ingredients centered on fish caught in the nearby seas, and no preservatives are used, making them safe and wholesome. On the other hand, you need to be aware that they don't last long. Freezing is also not recommended as it compromises the flavor.
Furthermore, while some products like chikuwa and kamaboko can be vacuum-packed for shipping to other regions, many of the fried fish cakes we are introducing today only last for about three days under refrigeration and are not available for shipping. This means you can only eat them by going directly to where they are sold.
