The unchanged taste of "Shimizu Tofu Shop" in Rusutsu Village, loved by the local community for more than 60 years.
Shimizu Tofu Shop was founded more than 60 years ago. The current owner, Masashi Shimizu, took over from his predecessor, and he and his wife, Kiyoei, have continued to make tofu as usual. Now their son Kazuhisa has joined them, and the family now runs the business for two generations.
The secret behind the tofu that makes customers become fans once they try it may be the large kettle that they have been using since the establishment of the company. Although the fuel used to heat the kettle has changed from wood to heavy oil and then to kerosene, customers say that the taste is different from other restaurants because it is cooked over an open fire.
You will be surprised when you first hold the tofu made in this way. The first thing that will surprise you is how heavy it is. I was told that each piece weighs more than 800 grams.
The firm, chewy texture of the cotton (momen) tofu has a very rustic flavor. The tofu has a very simple taste, which is very much like old-fashioned tofu, which is why it has tasted the same for over 60 years.
In addition to tofu, the restaurant also handmakes deep-fried tofu, deep-fried tofu, konnyaku, and other items, which are also well received. Like the tofu, they are larger than what you would normally see sold in supermarkets, which makes them all the more exciting.
Shimizu Tofu Shop has long been loved by locals, non-locals, and even those with a strong sense of authenticity. When you actually try it, you will understand why.
