Shimizu Tofu Shop was founded over 60 years ago. The current owner, Masashi Shimizu, took over from his predecessor and has continued to make tofu with his wife, Kiyoei. Now, his son, Kazuhisa, has joined the business, making it a two-generation family business.
The secret to the tofu that makes you a fan after trying it just once may be in the large pot that has been in use since the restaurant first opened. The fuel used to heat the old pot has changed from firewood to heavy oil and then to kerosene, but customers still say, "The tofu tastes different from other restaurants because it's cooked over an open flame."
When you first pick up the tofu made in this way, you'll be surprised at how heavy it is. Apparently, one block weighs more than 800g.
