Jinseuen
At Jinseuen, freshly caught yamame trout are cooked on the spot. The salt-grilled fish, skewered on bamboo and cooked over a charcoal fire, is flaky and tender. The deep-fried version is so crispy you can eat it down to the bones.
The sashimi has so little of the gaminess typical of river fish that it's hard to believe, and it is very delicious. The deep-fried fish and nanban-zuke (fried fish marinated in a sweet and sour sauce) are delicious even when cold, so you can take any leftovers home.
