Human connections lead to a healthy tomorrow!

We asked Fukushima about her future goals.

"First of all, I want to get a firm footing so that I can continue running this shop properly, and I plan to start serving lunches in the new year. In the second year, I'll try making disaster prevention food using ingredients from Muroran and the surrounding area, making use of my knowledge of medicinal cuisine! I'll also study more about fermentation, get some qualifications, and in the third year I'd like to create products using fermented foods."

He also said, "The main characters of this restaurant are the customers who come. I want this to be a place where customers who happen to be sitting next to each other can connect over food and drinks, and where they can think at the end of the day, 'Today was another fun day!'"

Fukushima, who is an avid student, is also participating in the Hokkaido Food School this year. She says that being able to connect with food-related friends from all over Hokkaido has been a great support for her.

The plan is to commercialize "Celebrity Rice," a neo-oshihan rice dish born from conversations with fellow Food School members, by spring 2023 and have each member start selling it under their own name.
