Human Connections for a Brighter Tomorrow!

We asked Ms. Fukushima about her future goals.

"First, I want to solidify the foundation to ensure I can continue running this restaurant, and I plan to start lunch service in the new year. In my second year, I want to take on the challenge of creating disaster-preparedness food using my knowledge of medicinal cuisine with ingredients from Muroran and nearby areas! Also, I want to study more about fermentation, get certified, and in my third year, I hope to create products with fermented foods."

She adds, "The main characters of this restaurant are the customers who visit. I want it to be a place where customers who happen to sit next to each other can connect over food and drinks, and end their day thinking, 'Today was fun!'"

An eager learner, Ms. Fukushima is also participating in this year's Hokkaido Food Juku (Hokkaido Food School). She says that connecting with fellow food-related professionals from all over Hokkaido has been a great source of support.

Around spring 2023, she plans to commercialize "Celeb Rice," a neo-sekihan (red bean rice) born from conversations with her Food Juku peers, and begin selling it at each member's establishment.
