Hokuhokutei is a conveyor belt sushi brand operated by W Corporation Co., Ltd., which also runs the yakiniku restaurant Bulusta and the tonkatsu specialty shop Katsukichi. It offers fresh, seasonal toppings sourced from fishing ports across Hokkaido. While popular in Asahikawa and Chitose, it opened its first Sapporo branch in 2024.

In addition to sushi, a diverse range of side dishes is available, including Tako Zangi (deep-fried octopus), homemade chawanmushi (savory egg custard), and seafood tempura. In an industry where conveyor belt sushi prices have been rising, Hokuhokutei is committed to providing high-quality sushi at reasonable prices for families to enjoy.

Manager Takumi Takahashi, a chef with 10 years of experience, says, "Because they are common items, we want to offer the best quality."

The restaurant has a network of wholesale buyers in various locations who use their expert eye to select freshly caught seafood. Thanks to direct shipping from the source, transportation time is minimized. Perishable parts like internal organs are processed on-site to minimize any loss of freshness. Following the motto "good quality at a good price," the buyers select the best available items at any given time. Part of the fun is the excitement of not knowing what the day's recommendations will be until you arrive.

Hokuhokutei

"Seared Shiraoi Beef Sushi" (638 yen). A premium taste using the rare zabuton (chuck flap) cut.

The regular menu is full of tempting options, including bluefin tuna, hand-peeled sweet shrimp from Haboro, and homemade shimesaba (cured mackerel) made from winter mackerel at its fattiest. The "Lake Shikotsu Chippu (sockeye salmon)" is shipped directly from the Lake Shikotsu Fisheries Cooperative. After persistent negotiations with local suppliers, they are reportedly the only conveyor belt sushi restaurant permitted to receive direct shipments. This results in overwhelmingly fresh, premium sushi that can only be tasted here.

"Hokkaido Taisetsu Raw Salmon" (506 yen). If you eat this expecting conventional salmon, you might be in for a surprise.

Even the classic conveyor belt sushi staple, salmon, is different at Hokuhokutei. Their "Hokkaido Taisetsu Raw Salmon" is a domestically raised raw salmon cultivated using the underground water from the Taisetsu Mountains in Asahikawa. Its light fat has almost none of the characteristic odor, and the flesh is firm and rich.

Furthermore, it's amazing how they gather appealing fish from all over Hokkaido, such as "Nemuro Kinki (channel rockfish)" directly sourced from Nemuro, known for its high-quality fishing grounds, and nigiri of "Hakkaku (sailfin poacher)," a specialty of Southern Hokkaido, served with crispy fried skin.

"Shirayaki Unagi (plain grilled eel)" (638 yen), aged for 10 days to lock in its umami.

Hokuhokutei also offers sake that pairs well with fish. You can find rare brands like "Bijo-fu Kome Hitotsubu Sake Hitoshizuku" and "Ura Gasanryu Koka," which can be ordered by the glass for easy enjoyment. There are also plenty of three-piece sets that let you enjoy several varieties on one plate, such as the "Kai Zanmai" featuring fresh shellfish, and the "Gunkan Yamato" with sea urchin, salmon roe, and snow crab. It's not uncommon for customers to pair these for a slightly luxurious "drink at the sushi bar."
