Sapporo Fuji-ya's "Miso Tsukemen" is characterized by its incredibly rich dipping broth. The broth is made from a seafood and pork bone base—combining pork and chicken bones with mackerel flakes and dried sardines—and blended with a special white miso-based sauce crafted by the Miso Sommelier chef.
Back fat is added to the rich dipping broth, further enhancing its deliciousness.
Custom-Made Noodles that Stand Up to the Broth's Rich Flavor
The special custom-made noodles are from "Nishiyama Seimen."
The noodles for the tsukemen are also crafted with great care. These custom-made noodles, a blend of Hokkaido's "Kitahonami" and "Yumechikara" wheat varieties, boast a delightful chewy and smooth texture. They cling perfectly to the rich broth, allowing you to enjoy a flavorful bowl.

The "Kama-age style tsukemen," an original creation by Sapporo Fuji-ya, might just become a new winter staple. While tsukemen is often served with cold noodles ("hiyamori"), especially in hot weather, this is the opposite. It's a new style for those who prefer hot noodles ("atsumori") during the cold winter months: noodles are served in a hot dashi broth and then dipped into an equally hot dipping sauce. Although it's not currently available, it has the potential to become a new winter classic in Sapporo.

Sapporo Fuji-ya first opened in 2007 in Taihei, Kita-ku, Sapporo. After relocating to Susukino, it moved to its current location in Higashi-ku in 2019. The owner trained at "Yamaarashi," a famous shop known for its back fat tonkotsu ramen, making this a must-try for any ramen enthusiast. The brand also has branch stores: "Fujiya NOODLE" in Sapporo's Susukino district and "Sapporo Miso Fuji-ya" in Chiba Prefecture. In addition to its regular menu, the shop frequently offers limited-time specials, so there's always something new to discover with each visit.
