The most popular menu item is "Jidori Hikarimen Soy Sauce. The sauce is made with a blend of raw soy sauce from Ando Soy Sauce in Akita Prefecture and tamari soy sauce from Sekigahara Brewery in Gifu Prefecture. The chicken oil from the jidori chicken enhances the flavor of the sauce.

The noodles to go with the soup are homemade in the noodle-making room in the back of the restaurant. The neatly folded appearance of the noodles has been thoughtfully matched with the soup to give them a smooth texture, wheat flavor and taste.

Two kinds of char siu pork (pork and beef from Hokkaido) and roast beef further enhance the deliciousness of the dish.

Jidori Koumen Shoyu" and "Jidori Koumen Shio" are the only two items on the regular menu at "Shina Soba Casting," and we also recommend the Shio Ramen. The salt sauce, which allows you to fully enjoy the delicious taste of chicken soup, is a blend of three kinds of salt, including "Nuchimasu," a rock salt from Okinawa.

The owner, Mr. Kawanami, launched the popular ramen restaurant "RAMEN RS Kai" in Kiyota-ku in 2017 and attracted many fans with his niboshi chuka-soba at that time. 2021, he opened the current "Shina-soba Casting (chiu)" and is now operating with a focus on a single bowl of chicken seiyu (chicken soup). The owner, Kawanami, who enjoys walking around eating ramen, proudly offers a bowl of ramen that continues to attract new fans.
