Enjoy their proud chicken broth! We recommend "My Style Sapporo Ramen Tobi Shio"
Having eaten at many ramen shops, my recommended dish is "My Style Sapporo Ramen Tobi Shio." The shop's proud chicken broth is made with the neck meat of forest chicken from Miyagi Prefecture, which is cooked for a long time to concentrate the flavor. Furthermore, it is a bowl that perfectly combines the "Sapporo method" of adding soup to vegetables that have been stirred in lard in a wok. The delicious flavor of the chicken broth and the aroma of the cooked vegetables will have you drinking the soup non-stop.
The soup is rich but actually light, and is served with a moderate amount of oil so that people of all ages and genders can enjoy it to the last drop.
The noodles have a pure texture that matches the flavor of the soup.
They also pay special attention to the noodles. The medium-thick curly noodles are made from wheat grown in Hokkaido and are custom-made by "Sagamiya Seimen." You can taste the flavor and umami of the wheat at the same time, which matches the umami of the soup.
We also recommend the "Chuka Soba" made with rare Otaru chicken.
Among the other dishes, we recommend the "Otaru Jidori Chinese Noodles (Soy Sauce/Salt)"! The clear soup made with Otaru Jidori chicken will draw you in with its deliciousness at first bite, and the flavor will continue to last until the very end. The special soy sauce sauce, which combines the soup full of the flavor of Jidori chicken with sharp soy sauce, is a masterpiece made from a blend of five types of soy sauce.
Naturally, they also pay special attention to the noodles used in their ramen. They use straight noodles ordered from Menya Teigaku, a long-established noodle manufacturer in Kyoto, to match the soup perfectly.
The most popular dish is the "Seafood and Chicken Salt White Soup," a combination of our proud chicken white soup and seafood.
In fact, the most popular dish at the restaurant is the "Seafood Chicken Salt Paitan," which combines their proud chicken broth with seafood. This is a delicious bowl of soup with a refreshing taste, made by combining their proud chicken broth with seafood stock mainly made from bonito.
Every Friday, the restaurant serves only miso dishes as "Miso Day." Hien, which was established by the owner Maeda, who has a great sense of ramen, is a famous restaurant where you will have a hard time deciding what to order because every dish is delicious. We hope you will find your favorite bowl.
