The recommended dish is the 'Garyu Sapporo Ramen Hishio.' The shop's signature creamy chicken broth is made by simmering neck meat from Miyagi's Shinrinkei chicken for long hours to concentrate its flavor. This is then masterfully blended using the 'Sapporo style' of adding the broth to vegetables stir-fried in lard in a wok. The combination of the rich chicken broth and the fragrant, flame-seared vegetables is the key to its deliciousness.

The broth, described as 'kossari' (rich yet light), is served with less oil so that everyone, young and old, can enjoy it to the last drop.

The special soy sauce tare, which combines the rich flavor of the local chicken with a sharp soy sauce base, is an exquisite blend of five different types of soy sauce.
A generous amount of chicken oil brings together the umami of the broth and the deliciousness of the soy sauce.
Of course, the noodles for the Chuka Soba are also specially selected. To match the broth, they use straight noodles sourced from 'Menya Teigaku,' a long-established noodle maker in Kyoto.
