The impact of completely covering the rice! The specialty "Kobore Ikura"
It originated in Kushiro City in eastern Hokkaido, known as one of the leading fishing grounds in Japan. The first store in Sapporo opened in 1997. They serve sushi made from fresh seafood procured every morning from the Sapporo Outer Market. Their main product is the gunkan sushi, which is topped with about three times as much homemade salmon roe as regular sushi. The dish is also fun to watch as it is plated to the rhythm of lively shouts and drums.

The lineup includes a wide variety of nigiri, such as "Sushi Restaurant Pickled Bluefin Tuna," which allows you to experience the concentrated umami flavor of the fish, "Raw Scallops," which have an irresistible rich sweetness, and "Winged Mackerel," which is raised in a special fishing ground.

When the new rice season arrives, we compare different brands and create a blend that is best suited to our sushi. We also change the way we cook the rice depending on the season.
