The restaurant has its own processing plant and prepares fish immediately after they are landed. The fish is immediately shipped to the restaurant, and the temperature is thoroughly controlled to suit each fish. Our motto is to minimize the loss of freshness and provide sushi that is as fresh as possible. They also use "raw" seasonal fish whenever possible, and even if the fish is popular, they will not purchase it if it is not of high quality, such as if it does not have enough fat in it.
