Young chicken of Torisei Ebetsu Nopporo Store
In the Tokachi region, which is the center of dairy farming in Hokkaido, "Torisei" was born in Showa 53 (1978). Currently, it is a popular restaurant that operates 20 stores, including Kushiro and Sapporo. Being particular about each and every ingredient, it offers exquisite charcoal-grilled chicken and fried chicken that, literally, "can only be tasted at this restaurant."
■The key is "ko-hina" (young chicks) within 30 days of birth.
Our proud chicken meat is ko-hina shipped from contract farmers in Nakasatsunai Village. They are raised by being given a special feed called "Chiyoso," which is blended with wood vinegar, seaweed, mugwort, and other ingredients, reducing unique odors and excess fat to the absolute limit. It is high-quality chicken meat that offers a rich umami flavor.
■Our specialties are "Charcoal-grilled Chicken" and "Fried Chicken."
The "Charcoal-grilled Chicken," finished carefully over 30 minutes by skilled artisans, is a dish that symbolizes Torisei. By discerning the cut of meat and evenly and consistently applying heat, the flavor is tightly locked in. And the "Fried Chicken" is reputed to be refreshingly edible thanks to its special blend oil. Both are loved locally for many years, not only for daily use but also as a Christmas staple.
