"Kitakitatei," which opened in Yamahana, Sapporo, in 2024, is a conveyor belt sushi restaurant that prides itself on fresh fish delivered directly from fishing ports both within and outside Hokkaido.
The exceptionally fresh sushi toppings, selected by the "expert eye" of veteran brokers, include, of course, bluefin tuna, as well as hand-peeled sweet shrimp from Haboro, homemade marinated mackerel made from winter mackerel during its fattiest season, and a lineup of items such as Lake Shikotsu "chip" and Hokkaido-produced sailfin poacher, even those rarely eaten by Hokkaido residents.
Japanese sake is also available, and you can enjoy "a drink at a sushi restaurant" in combination with dishes such as "Kai Zanmai," where you can savor shellfish boasting of its freshness, and "Gunkan Yamato," a set featuring raw sea urchin, salmon roe, and snow crab.
