It's said that seafood robatayaki originated in Kushiro. In some restaurants, the chef does the grilling, while in others, customers can grill the food themselves.

Slowly grilling freshly caught seafood over charcoal concentrates its umami flavors without losing any of its juiciness. It seems only natural that this style of robatayaki, which brings out the very best in its ingredients, took root in Kushiro, a city boasting one of the largest fish catches in all of Japan.
